While I agree with you on most points, I feel like some degree of communication with customer on payment type (option 1), reminds customers that their dealing with a local business (owned by a local guy) - they're given an opportunity to help you out, so you can help them out. I guess this incorporates a degree of "folksiness" into the brand, but if your brand is "local helpful business," I'd argue that some amount of folksiness augments your brand. These are the reasons that small business owners own *small* businesses.
